1/2 cup cooked quinoa
2 small onions, chopped
3 cloves garlic, minced
1 jalapeno pepper, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 medium zucchini, chopped
1 (15 ounce) cans black beans, drained and rinsed
1 (15 ounce) can red kidney beans, drained and rinsed
3 (15 ounce) cans diced tomatoes
1 tablespoon ground cumin
Salt and black pepper, to taste
1. Put everything in the crock pot and cover completely with vegetable brother. Give it a good stir.
2. Cook on low for 4-5 hours.
